Canning.....
Never has been my thang! My Mom does a little bit..jams, apples, and tomatoes.
I do love to eat fresh canned fruits and veggies!
My friend Cathy's MIL cans, I guess a whole lot. So Cathy was kind enough to share with me.
I have green beans
chow chow ( what is chow chow?) I pretended like I knew
salsa
blueberry jam and Pears.
Cathy told me to take a dab of mayo and fresh cheddar cheese to eat with the pears.
Have you ever heard of that?
Canning seems like so much work to me. Perhaps I'm just too lazy!

Oh Girl, I grew up Canning...My Grandma use to say we eat what we Can and we Can what we don't ha ha!! I stil have all my canning equipment in the barn...My late hubs always had a huge veggie garden here and I canned all summer long...Chow Chow is like a corn relish..Don't care much for it..Enjoy your Can goods..Congrat on your Win..Hugs and smiles Gloria

I've never canned but my mother did and I would help her when I was a little girl. She always had a huge garden and would can everything. Blackberries grew wild right across the street from us and I would pick my little dainty fingers off getting lots of them. Course I think I ate as many as I picked. She canned blackberries! They were wonderful.
Yes, I've had the pears with mayo and some shredded cheese on top! It's good. Now Chow Chow is a relish. If it's made with cucumbers and spiced up like pickles and sweet it's good! Mr. Precious puts some of it on beans. I use it in my potato salad or deviled eggs! Okay, that's my two cents worth.

Canning? Ha! I barely know how to cook 10 things! I remember one year we had a huge crop of apricots and I helped my mom make apricot jam, but that's not really canning. I love how Southerners have huge gardens here and can their harvest. Something awesome about that!

I'm with you on the canning although I used to have to help my mother do it. She always had a huge vegetable garden and canned a ton of things. "Chow Chow" was always the weirdest word to me and I would never eat it. :-) She didn't appreciate that but I thought if it sounded weird, it must be. Lots of other items were delish though and I know we would not have had so many wonderful meals had she not done all that work. We just didn't have much at all but we did have good food and a spotless house! :-)

I have never canned anything, but I would love to learn. My grandmother used to can peaches and jams.
I love canning....I can every year now, especially tomatos and i'll do salsa too....always, always go to the local farm and get strawberries they are so cheap and i'll do jelly and jam. the same farm does purple hull peas and corn and we get a bushel of peas already shelled for dirt cheap and like 3 bushels of corn and zip lock and freeze them both....totally worth the effort and costs so much less....i've even pickled sliced green tomatos....they are yummy, especially at Thanksgiving! To me there's a great sense of accomplishment when you have a full pantry of canned goods from your garden and a freeze full of veggies!
Hi Debbie! I grew up in the mountains and we had chow chow in the school cafeteria with pinto beans...can you believe it? lol And yes...I LOVE pears with mayo and cheese! I do lots of canning every year. Love to garden and then can...hearing the great "pop" when the jars seal! But it can be a lot of work and it has to be done at the foods convenience not mine which is rather annoying.
I tried canning peaches in 2009. I felt such a sense of accomplishment, I loved looking at them in the pantry....until they turned brown, not sure I will try it again, I was so dissapointed!
I've just started to learn to can. I've done salsa, sweet pickle relish, orange marmalade and a few other things. I'm hoping our garden fairs better than it has the past couple years. If so I'll try my hand at more. We do freeze a lot from the garden also. It's work but worth it. :)
I have never seen greenbeans canned other than the store bought kind! Never heard that about the mayo and cheese before either....but I bet it's good. Kinda like cottage cheese and peaches. I never showed any interest in canning either, until recently. My desire to get back to all things simple, has left me with the desire to try all the things my Grandmother did. Is that strange? I dunno.
I've canned a few things with my MIL, jam and pickled green beans. It was fun!! I've never had jam taste that good!
Hi! I can lots! I never did til I married my husband and learned from my MIL. I love it and am slightly addicted: I guess I have to be b/c my husband loves to garden and we have to do something with all the stuff! :) It's not hard, but is time-consuming, but worth it to me. No pesticides on our food! :) We have chow chow here in PA, but I've never made it yet. Canning means spending time in the kitchen, so I'm unfamiliar. :) I do, however, associate with all the right people (those who spend time in the kitchen), so I reap the benefits.

I have never canned but I have made strawberry jam and rhubarb and ginger conserve.
I've always been afraid to can(if you mess up you can end up with a horrible case of botulism and well that's scary.) One of my goals this year is to create a garden that the animals don't devour and if I actually harvest a worthwhile crop, I may have to get over my fear of canning.

I have had pineapple with mayo and cheddar, never pears. But I guess the same priciple. Place half a marchino (sp) on top and call it gourmet! My Mom cans thank goodness.
That is my fav magazine. Been getting it for years. My husband loves chow chow. I had never heard of it till I met him since he grew up in the country. I know you eat it with beans. At least he does.
I don't cook much, but my mom and I do can a LOT. The thing with canning is that it is a lot of work cor a month or so... then, you have it all DONE! I don't know how many jars of veggie soup we have devoured in this house this winter :)

You are not alone on the whole Chow Chow thing. Until last July, I didn't have a clue what it was. Since then I have educated myself. It is a relish and can be made with just about any veggies you want. Cabbage, corn, tomatoes, peppers, etc. My hubby's grandmother makes hers with a tomato base, and she adds plenty of sugar, and hot jalapenos. I actually like it on hamburgers, and hot dogs. My Grandmother, a southern lady through and through, serves her chow chow with steak, and chicken, and just about any meat. Honestly, I don't care for my grandma's, but I do like the other grandma's stuff.
I do can, just not tons of stuff. I buy a few boxes of peaches every year and can those, as well as tomatoes, and peppers. I mostly freeze stuff. Around here produce gets mighty pricey in the winter, so I depend on my frozen garden goods for winter.
My grandmother on my dads side, Nana, canned. She even had a little building outside her home that was her canning shed. It's where she stored all her canned goods too. She must have really believed in canning because she also stored lot of cans of Chef Boyardee for the grandkids that came (like me) who didn't eat the real foods. I remember having to go out to the "outhouse" and get my ravioli and not liking it, because it was dark and scary in there. LOL! Thanks for the trip down memory lane!
When my children were little I canned all the time. The first year we had a garden I canned 90 quarts of green beans. What was I thinking!!! I always canned and gave friends and family gift baskets of vegetables and jellies at Christmas. It was a big hit because not too many did that kind of thing. My childrens favorite salad growing up was a pear on a bed of lettuce with a dab of miracle whip and grated sharp cheese on top. I have not had that in years. Thanks for the reminder. My parents used to can when I was young and I've always wanted to try it...but it really does seem like a lot of work. Maybe I'll just put it at the bottom of my To-Do list :)
Oh my goodness... I can remember long hours spent in the garden and kitchen with my grandmother, picking things from her garden, snapping snaps and helping her can. I too have a new found love for canning. I started a container garden two years ago and have begun my own journey in canning. This year I plan to can more and have a 100% bonified real garden and really starty the canning process!!!
Wow. Those cans were a gift to you? Kathy must sure love you and her MIL must sure enjoy working on canning instead of eating it all unlike me. Is this gifting others cans of food a weight losing tactic? Is it? Huh? Huh? Huh?
